Leftover Easter Eggs

Besides devilled eggs, what do y'all do with them?


I like a tomato sandwich with sliced egg on it. I'll also make some chicken salad with some sliced egg in it too. I've never tried to make egg salad. Seems I have an old cornbread and chicken casserole recipe that calls for boiled eggs.....

Pickle them.
Peel them, put them in a jar with vinegar, spices (salt pepper cayenne) and chunks of garlic. Refrigerate

Egg salad, ingredient in tater or tuna salad.

Chop whites
Mix yolks with mayo, mustard
Boil macaroni noodles
Sautée some purple onions & a lil tasso
Frozen green peas (run water over them till they are not frozen)
Mix all ingredients & season.

Egg Ala Goldenrod
peel 4 eggs, cut in half and separate yolks and whites. Chop whites and press yolks through a fine wire mesh strainer. Make a light roux of 2 tblspns butter and 2 tblspns flour. Slowly stir in 1 cup of milk and bring to a boil till it slightly thickens. Stir in whites and salt and pepper. Serve over toast with a thin slice of leftover Easter ham. Sprinkle with the yolks.
