gutted fish wil keep for a long time packed in ice.

In the old days, (when my grandfather wsa a commercial fisherman), fresh fish would be caught offshore, packed in ice and brought in whenever they filled up the holds. could have been 3-4 weeks.

This and I would definitely make sure you drain the water out. Fish will hold up really well for extended periods of time if kept cold and 'dry'. Don't let them sit in water. I would suggest bringing zip lock type bags to seal the fish up and keep them dry while under the ice.
