I know I'm in the minority here, but I think crawfish are maybe one of the most over rated things ever.
I hear ya. I mean, don't get me wrong. I get cravings for boiled crawfish, but I can't eat it all the time. It messes horribly with my stomach.
Beyond boiled crawfish, I don't like any crawfish meals. And man.. I have tried a ton of leftover boiled tail recipes. They just have too distinct of a taste that I don't like. I don't even like them fried on a platter or poboy.

I cooked this. (Not my picture)
Roast Pork Loin with Apples
I realized I didn't have apple cider, so I improvised with applesauce and brown sugar and adjusted the apple cider vinegar.
Turned out great.
Then, I peeled some Easter eggs and made tuna salad sandwiches. Probably the best I ever made.,
Next, we're going to have some stuffed artichoke.
