IMO the best way to approach it is to take the 30 day intro approach. For 30 days, eliminate wheat, most grains, legumes, and dairy. After 30 days, reintroduce something one at a time. How do you feel, perform, sleep, etc?

For instance, if you eliminate and then re-try milk, and you are fine, then go ahead and have milk.

I reintroduced milk and now do raw cow and goat milk.
