They're both workhorses.
Had the foreman 500, it did everything I wanted it to and never had a problem. Then I bought the 420 about 2 years ago. I put the same mud tires on it (27 in mudzillas) and it's done everything the foreman did. I will say, as already mentioned, the rancher is much lighter than the foreman and a little smaller. I went with the rancher because I have no need for a humongous arse bike. They'll both pull crap, get you to the stand, and play in the mud all day just fine.
ETA: Get the foot shift
