I do think that a ton of people have no idea what gluten is. They see "gluten-free" on a food item and assume that means healthy. I could eat gluten-free items all day long and become a big fat, unhealthy slob. But, I feel the same way about food items that are marked "fat-free", "sugar-free", "natural", "organic", etc.
