I'm thinking about taking the SO to a sushi rolling class. Kind of a twist on a date night. Anyone ever been in the BR area? Maybe this one? LINK

Was about to say, I don't think you need an entire class to really learn how. You just need to buy the probably 5$ bamboo roller and watch a couple YouTube videos.
But as a date night, that's a good idea

Those prices are ridiculous.
I taught myself from youtube. It's not really that difficult. The key is getting your rice "right."
I would suggest watching youtube videos and making naked sushi at home.

don't waste your $$$
I bought a $8 acrylic box press (see below) and made this box sushi below ... simple, simple, simple
I'm self taught and will tell you everything you need to know.
go to Asian or oriental store, buy the sushi rice, ponzu sauce, wasabi, soy sauce, seaweed wrapping or soy wrapping paper, tobiko roe, sirachi , seaweed salad, miso soup, etc...
I buy my fresh tuna from Rouses.
the box sushi below was my entry for the February food challenge

My wife has gone to a class at LSU leisure classes in the past. I don't know if it is still offered.
