Now that I know I can keep some of the apps idc to keep a touchwiz look.
Can anyone tell me their preferences with cyanogenmod vs paranoid android
I will read up on them both, but just wanted to hear some of y'alls thoughts.

I've never used paranoid. Cyanogen gives you so many options and things you can change and customize that it will make your head spin. I think its one of the best ROMs out there and it's probably the most popular for all android phones.

If you don't care about touchwiz then cyanogen is a great option.
Once you get your custom recovery installed (like the other poster mentioned twrp or cwm whatever) you want should make a nandroid backup of your device at that time. With that backup you can always revert back to it just in case. Also you can make a nandroid of say a touchwiz ROM and say a aosp ROM (like cyanogen). This way you can run whatever you feel like by just restoring your nandroid backups. You will get the hang of it and it will be easy soon enough.
