Is a person who didn't get the shot or the flu considered in any statistics?

The question is: Do vaccine's work in boosting your immune system against specific antigens?
We know the answer to that. It's basic immunology. We've known it for hundreds of years.
Trying to obtain data from randomized studies on a population from elderly compromised immune systems to healthy 20 year olds is probably difficult, especially when the vaccine misses the particular strain some years.
But we know how vaccines work. If the vaccine is a match, you will have protection to varying degrees depending on your age, health, etc. But you will have protection. Again, it's science.
