Keep in mind I have no other All Inclusive Experiences to compare to.
I'll keep it relatively quick and give more indepth on restaurants/drinks and things to do later (hopefully with pictures)
I never had a bad meal but no place was better than expected. The good restaurants were solid, the buffet/low key places were above average nothing to write home about
Tasted good, used decent liquor but you have to add extra.
Alternatively, you can go into the 24hr lounge's self serve liquor and top yourself off like me
Exceptional. Incredibly friendly/engaging, always checked up on us to make sure we never wanted or needed anything whether at restaurant, lobby or pool.
Housekeeping 2x/day and they never touched any money left out.
The Zilara is the adult only hotel and it was everything I wanted from a intimate and romantic place for the wife and me. I thought the hotel makes a great case as best looking exterior in the Hotel Zone, the rooms were fantastic and service added to that.
They had a lobby show every night at 9 which was fun, live music near lobby bar and other fun things. While there are social areas like swim up bar, lobby bar at night and events, the atmosphere for 95% of the hotel is romantic/intimate (aka the wife and I happily did our own thing)

TL;DR version
Based on my experience, if you wanted a more intimate/romantic vacation in Cancun I'd definitely recommend. Don't expect a vibrant social/party scene though
Wife and I are planning at looking into Hyatt Zilara Rose Hall in the spring based on this experience

Good stuff. Sounds like a great trip.
With Cancun being two hours from Houston, I'm thinking this will be our first post-baby trip. It checks all the right boxes: close, affordable, easy, romantic/intimate, etc.
