That's what I'm doing. I'm gonna put a 3 hour smoke on them, then flash'em in the oil to crisp up the skin. Then give'em a bath.

TJ's in Baton Rouge does it this way.

3 hours may be a little long


I cooked a whole turkey in 3 hours, so some tiny arse wings may be overdone
