Let's leave out the unwashed masses for a moment who still love Mack and will be shocked (maybe less so now that the "Mack is gone" narrative is getting out there) when he retires soon...because they don't count and fortunately the people who matter aren't in this group.
I would say the list is probably Saban, Briles (most don't realize the buyout is an impediment), Muschamp (yes, even with Florida's problems), and then someone like Fisher or Shaw. As you can imagine, the list is sort of a coach du jour, whoever had success last. Because of that Malzhan's name has come up (just on message boards, not with the decision makers).
I personally believe the following coaches could have great success at Texas: Saban, Shaw, Fisher, Briles, Anderson (at Wiscy), Mora Jr., Briles, O'Brian, John Harbaugh (I don't think he's that unrealistic of an option), and Muschamp, (but he's last on my list). These coaches would establish accountability and toughness in the program - which, frankly, are the two traits most lacking.
