Frodo was virtually unaffected by the ring for a significant portion of the journey. If they took the eagles then the journey would have been much shorter and thus Frodo would have arrived at mount doom before the rings power had begun to take hold on him.

The rings power gets stronger as you get closer. It's not a time issue, it's distance.
