A bit of a deus ex machina device.

One could ask why Gandalf didn't ask the Eagles to carry Frodo to Mt Doom to drop off the ring. 10 pages and the trilogy is over.

Nazgul, Fell Beasts, the Eye of Sauron can strike down anything, hoards of orcs would be waiting for them on Mount Doom, etc. They may have destroyed the Ring, but using the Eagles to destroy the Ring would have ensured their deaths.

I hate this argument because it is incredibly simplistic and ignores the very reason that it was only a fellowship of 9 to escort the ring to Mt. Doom.

Sauron never thought that anyone would try to destroy the one ring. He thought that whoever had it would claim it for their own. If the fellowship had used the EAgles to fly into Mordor then Sauron would have seen it immediately, sent out the Nazgul to attempt to stop them and guarded the entrance to Mt. Doom. There is no way the ring would have been destroyed if they just flew into Mordor on the Eagles.
