Batali has a really good recipe which goes like this.
You blend up olive oil, breadcrumbs, garlic, parsley, and anchovy until it is a paste. Smear it on both sides of the thighs. Pop it in fridge for about 30 minutes to firm up. Then grill. You get this nice crust and smokey flavor. Excellent dish. Also good on pork chops.
