Thanks again for your help. Is there one burner that works best for both jambalaya and crawfish? Looks like you will need a high pressure regulator for crawfish.
What hardware stores do you recommend? I travel for work from New Orleans to Houston so I am open to stop anywhwere along the way.

The first time you use your jet burner, the paint will melt off. Make sure to set up in a place where this is not an issue.
