Right...in most cases it has to do with ball placement. Of course, receivers are taught to catch the ball with their hands out in front of them when they can. I've never seen anyone suggest allowing a ball to go past you so that you can turn your shoulders and catch the ball as it passes you over the shoulder. Assuming the ball and defender are in the same place, you'd always want to get your hands our front and as close to the QB and ball as possible to give the defender less space to make a play/pick.

What the OP is describing sounds more like a reaction to ball placement...an adjustment rather than proper technique.
