Yeah, I stuck to the roads as much as possible. A lot of aggressive animals were more difficult to kill than the random pirates that travel up and down the roads, which you can hide from.

These things are fricking crafty and will surprise you even on the road. If you hear a hissing noise, you better get fricking moving quick.
And another thing.
There are heavier enemies later in the game that can only be taken down stealth wise if you have unlocked that skill. I suggest working on it about halfway in the game. It really sucks when you get to the later parts of the game and you realize you are 3 or 4 skill points away from that skill.
