Finally smoking my first pork butts

Started at 4. Won't finish till late tonight. Really just testing it out and tweak some things before I do it for people.
Went with the Franklin BBQ method but changed the spice rub a tad bit

Kept his ratios for the most part. Added cayenne and mustard powder about half of what I did for onion, garlic, and pepper.
Spritzing with apple juice. Trying to stay around 250-275 with charcoal and hickory wood

Couple questions:
To fill the water bowl or just foil? I know it will get hotter quicker but is this just a personal preference?
Foil the meat and put it back on the smoker? Is this necessary or did you just want to speed up the process?

Finished the pork butts around 12 last night. They came out incredible. Pulled amazing, smoke ring was good and bark was money.
Wrapped them after about 4 1/2-5. Spritzed with apple juice and made a BBQ sauce for after.

Followed the Franklin BBQ method. He did it and it keeps the moisture in. Probably safer this way so it doesn't dry out. After doing it though I won't change anything. It was perfectly juicy

Agree to all that............foiling them also protects them from the "smoke".....................when I was a rookie once I added too much wood and my brisket tasted like a tree.
Foiling will speed up the cooking process a little bit as well.

Did you take any pics More Beer?? Glad it turned out well....when I did mine, my wife was amazed at how good it was.

So it looks like you foiled them like 3/4 the way through the cook? I guess I need to look up the Franklin method before I do my first cook

Yeah it's a little over halfway. Only kept them on there for 8 hours. Double wrapped each butt with good spritz of apple juice
