I've had green pea and cheddar salad... wasn't too bad, but only because the cheddar taste compensated for the peas. 
At any rate... I'm going to try the green pea and mint idea. Sounds somewhat Indian.

I throw them into any Stir Fry if I don't have snow peas for green.
