I flipped on combine coverage during my lunch break, and looked up stats of players I am interested in. I'll probably even watch videos online of some of the pro day drills. I like to see what measurables my favorite players have, and how they stack up against other players.
Plenty of people enjoy watching these events.
I'm not big into recruiting, and thus don't closely follow national signing day. However I see why others obsess over signing of the next stars for their favorite team.

I was actually told that Charles Scott would be out there as well now that his legal issues are behind him. Not sure if this is true or not. Didn't see anything mentioned anywhere.

Because LSU fans like to see their players doing shite on ESPN.

Wow, you are a little too worried about this. Why do people watch anything? Because they want to. Don't watch if you dont want to, but I'm sure there are plenty of people that will find it interesting to watch.
