I have an etouffee recipe from an old room mate from Texas that uses cream of mushroom as the thickening agent instead of making a roux or using an instant roux. Not the worst bastardised south Louisiana dish I've ever had.

I had a friend who did this also and I thought it was pretty damn good. If it taste good, it taste good. Whether or not it the "right" way to do it or not, I could careless as long as it made my belly happy.
