looks very good, what the story behind the bacon? I like it, never had it that way.
I do not believe this to be true, it may not be authentic per south louisianians, but I do it and like it.

I cook bacon or sausage first every time i cook a jambalaya. Then pretty much do what you did minus tomatoes. Tomatoes don't belong in a jambalaya but to each his own. Kinda like using cream of celery and mushroom soup in one.
