I've used White Labs plenty, and used the same with my pale ale this weekend too.
I can't believe I've been using a 5 gallon carboy for my primary up until now. No wonder I've had issues with the airlocks and blowout tube

Once I've got them all thoroughly mixed I usually put the lid on and don't mess with the grains again.
I've seen people who mash over a burner stir them constantly though.

Technically I am outside the boudaries of pale ale now, based on some overhopping i've done. I'm at 48.1 IBU's, 45 is the limit for pale ales, by style. I wanted it to be around the 5.5-6% range.

I also plan on dry hopping.
I have .33 oz of Citra i'm using, I also have .25 oz. of cascade leftover. I wonder how dry hopping the 2 would turn out, or should i just stick with 1 hop variety.

I've never had a problem dry hopping with multiple varieties.

Throw them all in there. Can't over dry hop as far as I'm concerned. Especially with only that little amount.

Yeah. I also have 4 1 oz. bags of whole leaf hops. Cascade, Chinook, Willamette, and Centennial i believe.

Don't know much about PH to be honest. Just figured if I was adjusting it with 5.2 I should at least have a way of gauging what's going on.

The PH of your mash can effect your efficiency and can lead to tannin extraction if the PH is too high.
I think palmer says this occurs above a PH 6.0

BugAC, question. You said that you had 83% efficiency and hit your OG at 1062 but were short by half a gallon or so? How did you get to that 83% if you came up short, technically?
Oh and I brewed yesterday. Brewed an Irish Stout at 4.1% or so. Pitched on top of an Irish Ale yeast cake. Beer finished fermenting in under 12 hours. Boom.

In talking to Boo I have no idea what the issue is at his house.
you said you got 70% with batch sparging right? That's not terrible at all. If you find that 70 is where you are at then instead of trying to get it up to 75ish with process I would add an extra lb of base malt. Just don't count that extra lb into your OG calculations and you should be golden.

I'm thinking about doing that already.
Did you have a decrease when you batch sparged a few weeks ago?

Not a huge decrease, but that could be that I wasn't getting the best beforehand. I am hitting the recipe numbers both ways. Yesterday I even was low volume wise but over OG so I added water to top it off.

I don't know. I input my measured Pre-Boil gravity. I had to adjust my points based on the temperature at reading. It read at 1.042, but added .01 points to get a measured pre-boil gravity of 1.052. Put that into beersmith and my efficiency read at 83%. I then conducted my boil and all i gathered was 4.5 gallons. I don't know how, but thats what i got. and my target OG was 1.062 post boil. And that's exactly what i got.
