I believe that the concerns about physicallity and if the body is ready for the nfl after highschool (or one or two years after) are a legitmate concern to prevent kids from jumping to the nfl too soon.
As for baseball, well going to college is a choice for baseball, you can go straight from middle school if you were good enough. So the college baseball analogy holds no water. Like baseball, i do not think there is a physicallity disparity to justify keeping a kid from going straight to the NBA.
