I would recommend starting with the mushrooms. Alton Brown used a technique that almost makes them taste like beef. Slice them flat rather than in chunks. Saute a few at a time until they turn golden brown and then do the next batch. You don't want to overcrowd because that leads to steaming instead of sauteing.

I made it once before with grilled portobellos and grilled eggplant. That was much more satisfying to my carnivore sensibilities.
