Thank you, my dear! Yes, I use Penzey's a lot and I LOVE this chili powder. I used the 3 tablespoons in this. It contains no salt, so you salt separately. I like that.

I used to do that, too! I think I just use less liquid now so that it doesn't need tightening.

You're definitely not alone. I always have onions, bell pepper, green onions and garlic around. Usually have celery but not always. When I'm cooking something that uses all of them and the amount doesn't much matter, I use Guidry's. If I want a heavier bell pepper taste or garlic taste, I just supplement but it still saves me a bunch of chopping. I use about 4 or 5 of them for gumbo and that saves me a lot of chopping since I have to chop other things. I love to chop, but sometimes my wrist doesn't care too much for it.

I like that also. I prefer to control the salt as much as possible.

Now, I want chili. A lady just delivered 10 dozen hot tamales to my house that are still so hot I can't get one out to try one. They're tied up in half dozen bundles. Have you ever made a hot tamale type pie with the tamales? I don't like corn in that sort of thing, but I've been looking for a way to use them in a similar dish. Haven't been happy with what I've come up with so far and can't figure out what I'm looking for!
