I've had a heavily herbed gumbo from a poster here recently and it was very tasty... I doubt he used parsley though.

yes.. it does. the herbs give gumbo a lighter flavor.. it provides balance to the heaviness of the roux and meat.
The same that thyme does with a dish like red beans and rice..
