Peel...dice....parboil.... then smother it down with some shrimp.

Peel and cut into thick slices about 1/4". Sprinkle a lot of salt on each slice and let them sit, standing up, for about 45 minutes. This procedure gets a lot of the water out. Rinse and dry the slices with paper towels. Fry in EVOO on fairly high heat. Remove from pan, top with Parmesan cheese. Have as a side dish or make sandwiches with La. Hot Sauce. Simple and good.
Another: Peel egplant and cut into quarters. Stuff each quarter with pieces of garlic as you would a roast. In a frying pan cook covered in plenty tomato sauce till they get soft. Fix some garlic bread and pasta. Thank me later.

slice into wedges and smother it with onions and garlic and a few diced tomatoes with Olive oil in a deep dish to get descent layers, cook at 400 for 30 minutes, great with a side of white beans.

I guess no one mentioned Baba ganoush. First choice of thousands of mid eastern folks with a slice of pita bread, some feta, radishes, parsley and a bit of olive oil.
