Mix equal parts of sour cream and whipping cream in a skillet to simmer and thicken. Use 8 ounces of each. Add 1/3 cup of good coarse brown mustard. Fold in a T or two of minced parsley and green onion at the end. Season to taste with salt and pepper. Cool when it thickens. Great dipping sauce for fried duck and goose.

We had fried deer meat at my brother inlaw's camp this weekend and they had remoulade sauce as a dipping option. It was great. He said someone brought it this year to try it and it has stuck. Everybody liked it. It was the Louisiana brand you get at any grocer.

fried duck works well with any kind of berry-based sauce. blueberry, raspberry .. you can also use things like plums or black currants.

Still have satsumas do a satsuma chutney, or orange/mango
Also did a honey/cream cheese last week with some duck empanadas. Cilantro sour cream and onion and chive cream cheese were also there.

My SO threw together a blueberry sauce for our Christmas duck that was delicious. Fresh blueberries, OJ, red wine, chicken stock, brown sugar and some apple cider vinegar.
