I have done a few pork loins.

Cut the pork loin in half or even thirds so they are about 3 lbs each. Inject with creole butter.
Fry at 325 for about 20 minutes or 7 minutes a lb.

Boil some shrimp/crawfish/little necks. Fry some yeast rolls. Fry some soft shells in season. Catfish and hush puppies for the neighborhood.....

For the ham or pork loin, Besides the creole butter do you season the outside at all?

Also, how much oil do you use for one ham or one pork loin?
