I been around this.. since 1978... often hunting 80% of the days in a season.. I am only aware of two dogs being attacked by gators... one in TX and one in kramer...
my dog.. once wouldn't get in the water..... she just barked at us... we soon saw why....
both of the dogs I am aware of that got attacked were "bank running" when they got attacked..

Ive walked up on two wading in chest deep water while duck hunting. The first one eased under water right away and it was pretty scary since I couldnt move very fast. The other just stayed there. It was between me and the bank, so I took the long way around
Wouldnt they be sluggish even if they were out? That why I figured neither messed with me.
