how does your Ville Platte compare to these national brands, local runs the risk of inconsistancy and availability.

Not in VP...the old timers are there at 4am smoking sausage that they mixed and prepared. They pass on the recipe to their sons or daughters who take over the smoke house...and availability, you may find a shortage on Christmas Eve..but buy your 5lb box before

Teet's in VP is my favorite...but RAY'S runs a close 2nd for boudin AND smoked pork sausage
