I normally sautee 2 sliced garlic cloves in butter, then add a 16oz bag of frozen chopped spinach, with the water wrung out in a towel. I cover, and wilt the spinach for 10 minutes or so, then add 1/2 cup of shredded mozzarella, 1/2 cup of shredded parmesan, and 1/2 cup of heavy cream. Fold several times, until well mixed and cheese is melted.

I know some add bread crumbs, and that fresh baby spinach would be better.

How do you make it?

I make it pretty damn similar to the classic River Road Recipes version.
