Just used half of the Andouille sliced thin on top of two home made pizzas. Good lord its awesome. Will probably throw the other half on the pit for a little char and keep as a snack w/crackers

I can't see throwing good Andouille on the grill.
True Andouille already has a great heavy smoked flavor and would to me be to dry off the grill.

Try
Gumbo
Jambalaya
Bean
Baked beans
Cooked w Cabbage
With a cream sauce over pasta
Corn Maque Choux
Corn and crab bisque
Gris Gris Shrimp and Andouille Muffin Cakes which were great by the way.

Makes a great baked Mac and Cheese
