Pastalaya is more consistently "good". Jambalaya has a better chance of being "great" or "mediocre". Think about comparing a Saints regular season game in the dome to a Tiger's regular season game in Death Valley. The Super Dome is just about always "good", it's rarely if ever bad and only once in a while is awe inspiring. Death Valley is more often awe inspiringly awesome, but for ever Bama game there are 3 FCS or sunbelt opponents (Towson, Idaho, ULL, Troy, The Citadel, North Texas, ect).

Pastalaya is harder to screw up by far. Both are very very good.

Sounds like you're saying pastalaya is harder to frick up, where as jambalaya might actually require some skill to execute. Hmmmmm, this may explain the popularity of pastalaya.
