I can't remember the name of the joint in Plaquemine(someone else will) give them a try. Two lbs of that and a few other items will make a damned fine pate de compagne. It takes bit of effort of grinding the parts down with a food mill, but after that assembly and cokking are easy.

You may not find it fresh but I've been lucky in finding it in the frozen section of some of my local Associated Grocers food stores. I don't live in Baton Rouge but around the Hammond/ Ponchatoula area, Bohnings, Carters and other Associated Grocers generally have it frozen. Some local Associated Grocers affiliates, in Baton Rouge, may be able to help you out.
