If you are going to play any of them, play 2. Just to get you used to the mechanics.

Skip the first and read a quick wikipedia recap of the plot. Nothing to really miss here and it probably wouldn't hurt too much if you didn't even do that.
I highly recommend 2. It's my favorite game of all time. Make sure you give it a couple of hours. It starts out a little slow, but ramps up pretty quick after that. If you love it like I did, then you'll definitely need to play AC: Brotherhood...picks up where 2 left off. It also refines the controls and the gameplay improves. For me, 2 and Brotherhood are just one long game on two discs.
AC: Revolutions finishes the main assassin's story from 2. I liked it a lot, but many felt it got too stale by then. It also moves away from Italy and the overall story of the previous two games. Better than AC1, not as good as the II and Brotherhood. Very little plot wise happens that will impact the new one coming out. A quick wiki read will get you up to speed.
