For best quality movies, I gotta go with Jimmy Stewart. His resume is awesome b/c his movies can be comedies, westerns, dramas, or thrillers. Just so much variety.
Honorable mention to Brad Pitt, and you forgot to list Legends of the Fall and Interview with the Vampire in his (or maybe you just didn't think they make the cut, but I think those are both good flicks).
Harrison Ford has the most rewatchable movies though: three Star Wars flicks, three Indy flicks (f*ck the Crystal Skull), Blade Runner, Fugitive, the Tom Clancy movies. Damn.
