Rice Dressing

Anybody got a good recipe? Tips?

I make a dirty/rice dressing that is pretty good.
1# good breakfast sausage, browned with some onions and drained.
1 container of Richard's rice dressing mix. Mix with sausage and simmer for 20 min. or so with some chicken or beef broth. Then
cook 3 cups rice in chicken stock (or Beef)
Mix all together. Moisten with stock if necessary. If need to, place in oven for a few minutes to tighten it up. Can add trinity when browning sausage. I do this with garlic and green onion tops. Add seasonings to taste.

I make a few different rice dressings.
For Thanksgivings always grandma gizzard recipe.
But this time of year its Eggplant rice dressing. I'll make some this weekend.
Eggplant rice dressing
Ingredients
3/4 pound leaf ground beef
3/4 pound leaf ground pork
2 cups chopped onions
1/2 cup chopped celery
1/2 cup chopped green bell peppers
4 medium-size eggplants, peeled and chopped
1 cup water or chicken broth
Salt, freshly ground black pepper and cayenne to taste
Pinch of thyme
3 cups cooked long-grain rice
2 tablespoons chopped parsley leaves
Steps
Brown the beef and pork in a large heavy pot. Add the onions, celery, and bell pepper and cook, stirring often, until they are wilted, for about five minutes. Add the eggplant and water and simmer until the eggplant is very tender and soft. Mash with a fork. Season with salt, black pepper and cayenne. Add the thyme. Add the rice and parsley. Mix well and serve warm. Serves 8.

My grandma made the best rice dressing. It was amazing. But she never wrote down a recipe so when she died, we lost that goodness. My cousin, and other family members tried to recreate it, but to no success.
Then, one day, i started formulating in my head, the different tastes i remember from it. This is what i came up with. I let my dad try it, and he loves it. He always asks me to make some when we have gatherings, and tells me that it taste like maw maws dressing.
2 cups chopped chicken liver
1/2 lb ground pork
1/2 lb ground beef (I use lean ground beef)
2-4 slices of breakfast sausage (for flavor)
2 white onion
1 bellpepper
2 cups rice
2 cup beef broth (or vegetable)
1 cup water
1. Cook breakfast sausage, remove dice sausage
2. Cook liver, remove when cooked
3. Cook onions and bellpepper, remove
4. Cook pork and beef until almost brown
5. Add all ingredients, bring to a boil, simmer 40 minutes to 1 hour or until rice is tender and liquid is evaporated.

Very similar to my family's recipe; I usually make a big batch of the meat and eggplant mixture, and then freeze it in a bunch of smaller packs. Anytime I want dressing, just pull out a pack, defrost on stove top, and add freshly cooked rice.
