No carb meal ideas

I know the plain stuff, meat and cheese etc.

Does anyone know of any creative meal ideas that are NO carb?

Ex: There was a quiche recipe I saw that used bacon as the pie crust.

Cheeseburger Quiche

brown 1 lb ground beef and drain excess liquid
pack into bottom of a 9x12 baking dish

mix the following and pour on top of ground beef
3 eggs
8 oz of shredded cheese
half cup of mayo
cooked and crumbled bacon if you wish

cook for 40 minutes at 350

Eggplant casserole

Brown about 1.5 lbs ground beef with onion and bell pepper
Cube 1 or 2 eggplants and add to pot. Cook but not until they are mushy. ( this all will go in a baking dish in oven)
Add black and green olives
I can tomato sauce
Oregano
Basil
Garlic
I cup cream
1/2 cup Parm
Salt/pepper to taste
Combine put in 9x13 baking dish. Sprinkle top with Parm. Bake covered at 350 for about 45 min. Uncover and cook another 15 min. Sprinkle top with parm before serving

Eggplant pizzas
-Slice eggplants in rounds, drizzle with olive oil and season with s&p
-Bake off for 8 to 10 mins on 375 just to dry them out a bit
-Top with sauce (low/no sugar), meat, veggies, cheese, as you please

Also, use spaghetti squash as a pasta substitute and steamed/mashed cauliflower as a mashed potato substitute.

Was going to make this this week but didn't find a spaghetti squash at the fruit stand.

I had spaghetti squash Sunday night. Start with walnuts and brown butter in a skillet then add whatever herbs you like and the squash. It was great.
