Chunked chicken breast, salt & pepper, dill, slivered almonds and liberal amounts of mayo .

Man I use capers and chopped salty dill pickles. The little minis work the best. I also use a little cream cheese to give the mayo a bit of sharpness. Minced onion and a bit of Dijon mustard to finish it off. Of course if you want a fruity sweet salad, you wouldn't want any of these ingredients.

Chicken
Cream cheese
Pickles (lots)
Eggs
Salt & pepper

Simple and delicious. And none of that froo froo fruit in it.

Cook chicken tenders in broth with a couple of stalks of celery and half an onion.

Take out tenders and cube to as size you like. We do 1/2 inch give or take.

Save broth and a couple of tenders to make chicken and rice - really good

for salad 4 parts chicken, 1 part chopped celery, 1/2 part chopped onion, 1 part chopped sweet pickles, 1/2 part good mayo. Chill.

This works very well with Sam's Rotisserie chicken.

You can jazz this up as you like - A handfull of craisins, chopped walnuts, halfed grapes, sub dill pickles and low fat mayo for the sweet pickles to save calories.
