I love Mondo, but you are probably in for a long wait on a weekend night. Of the three you listed, probably Herbsaint. But, I'll throw two more in the mix: Melange on Chartres, right off Frenchman (see the other thread with Napoleon's review) and Maurepas. You shouldn't have a long wait for a two top at either. Maurepas is probably a little less expensive than Melange,and has a nice craft cocktail list and tapas style dining options. But, with Melange you have the advantage of being next to the Frenchman Street music clubs for post-dining entertainment.

Herbsaint for a first date, especially a blind date, is a bad idea.

Surprised it hasn't been mentioned or maybe I missed it, but I think Boucherie would be a good choice. Very reasonable prices, great food, laid back atmosphere but not too casual. Only negative is it is small so can be loud. You would need to call for reservation pronto.
Atchafalaya would be great too.
