Most chefs in baton rouge are limited by the menus prior to them working at their respective restaurant. With that said Nathan Gresham at Beausoleil, Mr. Brandt at Brandt's Maisonette, Austin Harrell at Mansurs, and Peter from Ruffinos are people I'm very familiar with and do some amazing dishes when they are allowed to cook the food they love. Really have seen some cool plates come out of a couple of these hands.
Btw marks place is nice in Plaquemine. On the south side of the city. The man who owns the truck stop owns that building and wanted a nicer tenant for a restaurant in the building.

Im not aware of any other BR chef besides SV recognized by the James Beard Foundation
