I was there and remember it clearly.
The "chief" on the horse was a comlete setup. He was not really from Fla. State. It was an LSU guy dressed up like a "Seminole" and he did ride a horse. The Tiger mascot pulled him off and pretended to stick him with the lance the rider had been carrying.
Later in the game, the crowd was throwing oranges onto the field.

Now it's coming back to me -- you are right, the "Chief" and the Mike encounter did appear to be staged. But it did get the crowd pumped up when Mike pseudo-stabbed Chief and then broke the spear over his knee.
