Easier and more likely option would be to ensure a good high quality broadband connection and watch it online.

I watched LSU v MSU via Justin.TV app on my iPad from the Czech Republic. Just need a decent connection.

Ok. UT is on CBS so maybe I can watch it on their website. Any idea if that is possible overseas? I know some streaming sites work differently out of the country.

CBS used to have geo-ip checks to prevent viewing from outside the US. You might have to connect to a proxy server like UltraSurf and then connect to CBS.
TVU player always has atleast one CBS channel.
