I, like you, am lucky enough to eat oysters off the boat on occasion. And Wilsons has the best in a container that you can find. That said, there is something about shucking them out of cool water.
There are so many tings that contribute to the taste/salinity. Katrina destroyed one of the Petrovich establishments down the highway. Man had catchers' mitts for hands.

Thanks guys. I've got friends down south that I could use for planned events and such. Just thought there might be an option for spur of the moment type stuff, even if there is some trade-off of flavor.
I had my first experience with grilled oysters at the Cowboys/Saints game two years ago...It's sad that it took that long. Anyway we had a guy shuck and grill around six sacks...It was impressive watching him work, and I couldn't get enough of them.
