Watermarks and Copyrights Question

Long story short, here are the basics of my question:
1) I'm working for a political campaign and right now I'm designing an invitation for an event.
2) The event is at a pretty new business and they don't really have a logo for me to use so I made my own...it looks pretty damn good.
So the question is, if I watermark this joker or secure it...can he use it in the future? Is there any way for me to "legally protect" it? I don't want the guy using it for marketing in the future unless he's paying me for it.

I would go HERE and look into trademarking or copyrighting the logo. Problem is, if you create it now and allow use of the mark for free the first time, that may give him grounds to continue use of the mark.

Could I do that though? The logo has the place's name in it...
