Grouper Recipe?

Anyone know of any good recipes for grouper? Plan on frying some but wanted to know if anyone knew of any good sauces or ways to grill or bake it.

I am baking some in the oven but am also going to fry some up just like any other fish. Heard it is really good fried.

Grouper is awesome fried all you have to do is slice thin fillets off the chunk of meat you get.

I grilled one I speared once almost like a brisket, had one big side, sealed in foil with butter, garlic, Italian dressing. It turned out insanely good.

I had fried grouper at Louisiana Lagniappe in Orange Beach. It was the shite.

Do you know what kind of grouper off hand?
If it's a scamp or a small gag or black you season it like you like, place in a sautee pan with olive oil and cook on medium-medium-high with the lid on. Flip when it feels right. 7 min cook time or so
You can also season how you like, cover with flour or bread crumbs and "fry" in olive oil at medium-high heat

I really like them that way and just top them with whatever sauce I'm in the mood for.

Pan seared almond crunch fish fillets:
Pre-prepare the almond cruch topping:
30-40 whole alomnds, 4 or 5 ritz crackers, and 2 dashes of ground nutmeg in a food processor and grind until medium fine.
Rinse two fish fillets in water and pat dry
In a large non stick skillet pour enough extrra virgin olive oil to just cover the bottom of the pan.
Place the fillets in pan coating both sides in the oil.
Turn oil on medium heat and after the edges of the fillets turn white flip them over.
Now only season the up side of the fillets.
Lightly season with Tony's or orther season salt.
then coat the top with the crunch topping. Allow the fillets to fully cook (5-7 min) while using a spoon to lightly drizzle the oil over the topping until evenly moist and adherent to the fillets.
Serve wtih a fresh garden salad, steamed veggies, white wine or a crisp light beer.
I also had it topped with fresh minced garlic and pecans in Cancun once and it was to die for.

No. Not a grouper.
I have had scamp stuffed with crab meat and that shite was amazing! 1 fillet, crab meat, the other fillet with tooth picks holding them together. :droop:

It is a big Warsaw we caught this weekend. I baked some in the oven with butter and sesame teriaki. We are frying some now and it looks like chicken strips

Yeah for a Warsaw frying is good and if you bake/grill/sautee it you'll need to cut the filets thinner

It all came out really good. The fried grouper pretty much tasted like chicken tenders

Mostly all you get around Destin-Pensacola is grouper when you get fried fish. It is fantastic. Another fish you get fried around that area is mullet. Way different from Mullet here and one of the better fried fish I have eaten.
I worked on a fishing pier for years so yes I have eaten plenty of species of fried fish.

I put mine on the grill with some Tony C's, garlic powder, onion powder, soy sauce, wortershire, and honey marinade and brush on while grilling. Comes out great. I do this every year on our Destin trip. I'll be doing it next week!
