I'm from New Iberia. Tabasco and crackers (Saltines) were on the cafeteria table every day at lunch in High School.

This was back in the day. We had Tabasco eating contests. Open the bottle, drip the pepper on the saltine and eat it. I could eat a Saltine cracker with 20 drops of Tabasco.

I think the sauce was toned down in the 70s or 80s so it's not as hot. I don't eat the stuff any more because it's too much vinegar. I like more pepper taste and less sour.
